100% Chardonnay
Louis and Catherine Poitout vinify their Chablis parcel by parcel to better showcase each of their terroirs. The Vénérées Vieilles Vignes comes from 58-66 year old vines in the “Sous plaine de Serre” and “Les Ardiats” vineyards planted on a Southeast facing slope in the commune of Fleys. The soils here are Kimmeridgian but with large chalky stones. Hand-harvested, the wine is fermented in stainless steel, where it stays until Spring, at which time it is lightly fined and filtered.
