In the commune of Gaiole, Cavarchione is the lowest of Istine’s vineyards at an average altitude of 420 metres. It boasts a significant presence of galestro in the soil and with an east to southeast exposition, is bathed in the gentle morning sun. This is also the most seductive and fleshy of the estate’s three single vineyards though still deftly proportioned. Fennel, tarragon and sage lend intrigue to dark cherry and red plum.
